SEASON: All year, depending on the variety.

LOOK FOR: Plump, fresh looking fruit with individual grapes firmly attached to their stems. Avoid dry, brittle stems and shriveled grapes or ones leaking moisture. Varieties of table grapes (grapes eaten as is or in fruit cups, salads, and desserts) include:

ALMERIA: Large, firm, light green, oval grapes with a mild flavor; available from October through February.

BLACK BEAUTY: Medium sized to large grapes, similar in size to Thompson Seedless, known for juiciness; earliest black seedless variety; available in May and June.

CALMERIA: Large, firm, light green, elongated grapes with a mild flavor; available from October through February.

CARDINAL: Very large, red, round grapes with a grayish bloom and a mild flavor; available May through August.

CONCORD: Large, aromatic, purple, round grapes with a distinctive flavor; a favorite choice for juice and jelly; available in September and October.

EMPEROR: Large, reddish grapes with a cherry like flavor; available from September through March.

EXOTIC: Large, shiny black, round grapes with a subtle mild flavor; available from June through August.

FLAME SEEDLESS: medium sized to large, red, round, seedless grapes, with a slightly tart flavor; available from mid-June through September.

ITALIA: Large, golden grapes with a whitish bloom and a distinctive full bodied fruity flavor; available from August through October.

PERLETTE: Small, crisp, frosty white, seedless grapes with a sweet, tangy flavor; available from mid-May through mid-July.

QUEEN: Large, red, slightly oval grapes, uniform in color, with a mild sweet flavor; available in August and September.

RIBIER: Very large, firm, jet black, round grapes with a mild flavor; available from mid-July through mid-February.

RUBY SEEDLESS: medium sized, brilliant red, rounded, seedless grapes with a very sweet flavor; available from mid-August through January.

TOKAY: Large, very firm, brilliant reddish orange grapes with a mild flavor; available from August through November.

THOMPSON SEEDLESS: Medium sized to large, light green to golden, oblong, seedless grapes with a light, sweet flavor; available from June through November.

TO STORE: Refrigerate grapes; use them within 1 week.

TO PREPARE: Wash and pat grapes dry with paper towels.
